Real Mom Recipe: Turkey Sausage & Spinach Stuffed Sweet Potatoes

There are so many things that make these Stuffed Sweet Potatoes such a great family friendly recipe I can hardly stand it!  Besides being delicious I love that they can be made ahead of time and that the leftovers are great for packing lunches.

Turkey Sausage & Spinach Stuffed Sweet Potatoes

You start by simply baking the sweet potatoes and then when they are cool enough to handle you scoop out the insides.  I scoop directly into a Tupperware so Hank has sweet potato to eat for  a week of dinners and lunches!   The multi tasking factor is huge here.  Also, I wrap the leftover potatoes in foil and leave in the fridge for my husband to grab and bring to work.   I used turkey sausage and spinach here, but you can use any meat and green you have in the fridge.   I’m always looking for ways to sneak greens into Hanks meals and this is a great way.  He is so excited about the sausage and beans that he doesn’t notice some spinach in the mix.   I hope you and your family enjoy these as much as we did!  To round out the meal, I serve these with a simple salad for my husband and I.

Ingredients:

  • 5 medium-sized sweet potatoes
  • 1.5 pounds of italian turkey sausage (I buy the links and remove from casings)
  • 1 can diced tomatoes
  • 1 can cannellini beans
  • 1/2 bag of spinach
  • 2 cloves of garlic grated
  • 2 cups shredded mozzerella
  • salt & pepper to taste
  • olive oil to brown the meat

Directions:

  • bake sweet potatoes on 350 for 60 mins or until soft to touch
  • slice potatoes and set aside to cool
  • brown the turkey sausage in a pan with olive oil
  • add canned tomatoes and beans and simmer over low heat
  • grate in garlic and add salt and pepper
  • mix in the spinach over low heat until it wilts and then turn off heat
  • scoop mixture into sliced potatoes and top with cheese
  • put back in oven on broil for 3 to 5 mins or until the cheese is browned
